Sweet and Sour Chicken

2 Chicken breasts, boned and cut in bite-sized

1 sm egg, beaten (optional)

1/4 cup flour or bread crumbs (optional)

2 Tablespoons oil

1 clove garlic, minced (a little more is nice)

1 teaspoon salt

1 teaspoon pepper (I like about half that)

1 lb. can unsweeten pineapple chunks

12 oz. tomato juice (I like V-8)

2 Tablespoons vinegar

1 Tablespoon sugar

1 teaspoon ground ginger

2 green peppers, cored and sliced (I like just 1)

2 teaspoons cornstarch, mixed in 1 Tablespoon water

 

Dip chicken in egg and roll in flour to coat well. Brown until golden

   -I skip the batter and just brown the chicken

 

Mix in rest of ingredients, except green pepper and cornstarch, and bring to a boil. Simmer covered 20 minutes. Add peppers and simmer 10 minutes longer. Stir in cornstarch and cook until thickened. Serve over plain rice.
