Aebleskiver
2 cups
buttermilk
2 cups
flour
2 eggs
2 tsp.
baking powder
1/2
tsp. salt
2 tbl
sugar
4 tbl
melted butter
1/2
tsp. soda
Separate
eggs and beat whites stiff.
Mix all
other ingredients; fold in the egg whites last.
Put
about a tsp. of oil or shortening in bottom of each cups and have hot.
Put
about 2 tbl of batter in each cup.
As soon
as they get bubbly around edge - turn quickly with knitting needle.
Continue
cooking, turning ball to keep it from burning until a straw or

needle comes out clean when stuck in the center.
Serve
while hot with syrup or jam or powdered sugar.
